Cream Puffs - Profiteroles


Cream Puffs are delicious pastries traditionally made with choux pastry, of butter, flour, water and eggs. Choux pastry can be made into cream puffs or éclairs as seen at many patisseries throughout Paris. They are usually filled with whipped cream or pastry cream, drizzled with caramel or chocolate. On a recent trip with family to Jamaica, Cream Puffs were almost always available as a dessert during lunch buffet, following a spicy jerk pork bbq or a fabulous coat curry, salads, fruits and all the beer one could drink, or a slushy if you were my niece or nephew :)

My nephew has nick named me as “the woman who is a machine in the kitchen” and happens to love cream filled puffs, and with is bribing smile asked me many times to make them for him upon our return home. Today I’ve decided to make them especially for him as he recovers bravely from a fractured foot and is sadden he can’t play outside during recess with his friends. He's to his quick recovery, so he can enjoy splashing in the pool during the summer holidays…!


For the Cream Puffs

Choux Pastry

140gr flour
1 teaspoon sugar
1/2 teaspoon salt
120gr unsalted butter
250ml water
4 eggs lightly beaten

In a pot, heat water to a simmer along with the butter. Once the butter is completely melted, add salt, sugar and flour, mixing rapidly until dough forms a ball and does not stick to the pot. Cook for about 3-4 minutes while mixing constantly. Remove from heat and let cool to room temperature. Add lightly beaten eggs one at a time until well incorporated and forms a thick sticky dough. Line a baking tray with parchment paper and drop a teaspoon full of dough for each puff onto the tray. Bake for 15-18 minutes in a preheated oven at 200C. Let cool completely before filling.
Makes about 20 Cream Puffs.

To fill, whip 500ml of whipping cream with 2 tablespoons of powdered sugar and a teaspoon of vanilla extract. You can fill the cream puffs by cutting them in half or by using a piping bag and piercing the bottom of each puff with a knife in order to pipe in the cream. Drizzle with melted chocolate.

Profiteroles são deliciosos pastéis feitos tradicionalmente com massa choux que leva manteiga, farinha, água e ovos. Esta massa pode ser usada para fazer profiteroles ou éclairs como visto em muitas pastelarias em Paris. Eles geralmente são enchidos com chantilly ou creme de pasteleiro e com caramelo ou chocolate por cima. Numa viagem recente com minha família à Jamaica, os profiteroles eram quase sempre servidos como uma sobremesa, no buffet na hora do almoço, após um churrasco picante de carne de porco “jerk” ou um fabuloso caril de cabrito, saladas, frutas e toda a cerveja que se consegue beber, a menos se era o meu sobrinho ou sobrinha :)

Meu sobrinho nomeou-me "a mulher que é uma máquina na cozinha" e acontece adorar profiteroles, e com um sorriso maroto me pediu muitas vezes para fazê-los ao voltar para casa. Hoje eu decidi fazê-los especialmente para ele enquanto se recupera bravamente de um pé fracturado e entristecido por não poder brincar com os seus amigos nos intervalos das aulas. Aqui está à sua recuperação rápida, para que ele possa desfrutar na piscina durante as férias de verão ...!


Para os Profiteroles

Massa Choux

140gr de farinha
1 Colher de chá de açúcar
1/2 Colher de chá de sal
120gr de água sem sal
250ml de manteiga
4 Ovos ligeiramente batidos

Num tacho, aquecer a água junto com a manteiga. Assim que a manteiga estiver completamente derretida, adicionar o sal, açúcar e farinha, mexendo rapidamente até formar uma bola de massa e não colar no tacho. Cozinhar por cerca de 3-4 minutos, mexendo constantemente. Retirar do fogo e deixar arrefecer a temperatura ambiente. Adicionar os ovos ligeiramente batidos, um por um até que estejam bem incorporados e formem uma massa pegajosa. Forrar um tabuleiro com papel vegetal e colocar uma colher de chá de massa para cada profiterole no tabuleiro. Assar por 15-18 minutos em forno pré-aquecido a 200C. Deixar arrefecer completamente antes de encher.
Dá para cerca de 20 profiteroles

Para encher, bater 500ml de natas com 2 colheres de sopa de açúcar em pó e uma colher de chá de essência de baunilha. Podem-se encher os profiteroles cortando-os ao meio ou usando um saco de confeitar e fazer um buraquinho no fundo de cada pastel com uma faca, a fim de conseguir encher. Regue com o chocolate derretido.
